Best series to get hooked on longer plot/stories?

Since getting my kindle I've read 1000x more than I ever thought I would and ever have before.

I've explored generes from the diabeties inducing sweet, to the nightmare/night terror creations of splatterpunk..

From the Sahara dry to poseidon levels of w(e)it.
(Humor and nerdy).

Through it all there has been one constant, everytime I finished a good book.

It, Ended…

So now I am here, asking for either a:
Fast paced series, with lots of stuff happening.
Or
A captivating/immersive one, where I don't think about how THICC or "slow" it is.

I love crime/gangs, politics/plot/war and murder/assassination. (When done well).

I love mythology/medieval/creatures settings vikings/game of thrones/.
But it can be set anytime/anywhere.

!! Big thing for me Is that story/power/things must make sense for the world.

So no Michael bay or tarantinoed actions…
