Who doesn't love a good fantasy with an interesting school as it's setting – Harry Potter, Name of the Wind, Enders Game, and Fourth Wing are some well known ones. I also recently read "How to Murder Your Employer – McMasters Guide to Homicide" that is set at a university for learning how to commit and get away with murder (fun book, I recommend it).
