You after non fiction or fiction? How realistic are you talking?
I’m afraid I can’t recommend a non fiction on the topic, but for fiction 2 series spring to mind
The Last Kingdom series is pretty highly regarded. It does a pretty good job of capturing the viking / saxon era, though it does fall into the trap of having a 21st century protagonist in a not-the-21st-century story which can be a liiittle jarring.
The Bloodsworn Saga by John Gwynne isn’t set in reality and is pure fantasy, but is heavily inspired by Norse mythos. So it’s a totally original Mythos and lore, but if you’re after the feel of viking rather than the fact of then this series is FUN.
