I consider myself a fan of sci-fi and fantasy books, but I feel like I’ve read embarrassingly few of them, so I wanted to ask you for some recommendations.

All of the Watch series in Discworld.
All of the Moist von Lipwig books in Discworld

A Fire Upon the Deep
The Peace War
Marooned in Realtime
I might be missing a few, but this is what I can remember reading and enjoying right now. In general, I value stories with interesting lore, and I tend to stray away from darker books. Some dark themes are fine, just nothing with constant violence like A Song of Ice and Fire, and nothing that is completely bleak. Young adult novels are fine if they are well written. Also, this might cross out a lot of books, but I would prefer nothing that is part of a behemoth series. I’m fine with reading a series that has around 3-5 books or maybe more, but something like The Wheel of Time just seems like too much. I know I sound like a hypocrite as a fan of Discworld, but those books aren’t all interconnected and have smaller series within them.
