I'm (32M) looking for a book or series of books that can really draw me into the story, and don't require too much thinking, since I will read them before going to sleep. Some genres that I like are fantasy & comedy.
Books that I have liked are few since I own mostly non-fiction, I enjoyed reading The Witcher, hitchhiker's guide to the galaxy, Game of Thrones, Lord of the Rings, … but more looking for some less big names, maybe. 🙂
I like some action and dark humor too.
Not a fan of horror or too romantic stories.
Any suggestions are welcome and appreciated!

Idk if it works well for reading before going to sleep, as the beginning is a bit confusing but I highly suggest The Nevernight Trilogy from Jay Kristoff. Great books that really draw you into them once you’ve been hooked for the first time.

Based on your examples I think you might enjoy the Malazan series it’s a complex epic fantasy that focuses on world building.
Christopher Moore is quite humorous!
He’s done a variety of “rewrites” of Shakespeare, and they often make me laugh. His books are not hard to read, some are pretty heavy fantasy (Fluke is about an underwater community that uses whales as, well.. you’ll just have to see!), and pretty light romance even in the “romance” books. Lamb is my favorite (I just recently did a reread and remembered why), but honestly The Lust Lizard of Melancholy Cove is a great intro to his writing style and has a lust lizard, so you can’t go wrong.
As far as books similar to what you’ve read, Red Rising by Pierce Brown is a pretty good fantasy / sci-fi series, though not sure it’s a “wind down” kind of story.
Out of the Silent Planet by CS Lewis is a sci-fi / fantasy series. I listened to the first book and found it super fascinating how much has changed in sci-fi / fantasy, and I enjoyed the story well enough too. It may be a bit more slower paced like what you’re looking for.
I’ve not gotten much into Brando Sando’s worlds, but I did enjoy Warbreaker and the magic / fantasy of it. I plan on delving further into his series this year.
