I'm thinking to myself "Necromancers always get a bad rap. But people donate their bodies to science all the time." So assuming if magic is real there would be a system to ethically source bodies. Or at least attempts to make one. This lead me thinking to also vampires. If vampirism was real, it'll be treated like any medical condition. We would have blood donation buses on every street all the time. Hell they probably will pay you for the blood. Why do vampires always have to be monsters stealing blood. They're often portrayed as rich. They can afford to ethically buy blood.

So are there any books like this? whether this is apart of the main plot or is a cool lore thing? I'm tired of reading monster this monster that. I really enjoyed legends and lattes and it'll be cool to find books in that same vibe that delves into the intricacies of ethical necromancy or vamprism.

Sabriel and the rest of that series by Garth Nix kind of fits your description. Maybe you’ll like that.

You’d like A Werewolf’s Guide to Seducing a Vampire by Sarah Hawley but it’s the third in a trilogy. BUT a big part of the second book (and the first really) involves ethics on Demon soul bargaining so you should just read the trilogy.

Technically the magic in Warbreaker by Brandon Sanderson can be used to animate anything, but it’s easier if it’s similar to a living human and a corpse is very similar to a living human.
