I've been watching lots of FBI dramas and I'm curious on how to profile people. I can already sort of do it because I'm a very observant person but I want to learn more. So does anyone have any suggestions for books that teach you how to profile?

John Douglas is a retired FBI profiler who has written several books on profiling and crime. Try Mindhunter, The Anatomy of Motive, and Obsession. He’s got several more, mostly co-written by Mark Olshaker. They get a bit repetitive if you read them all in a row.
Whoever Fights Monsters by Robert Ressler
Dark Dreams by Roy Hazelwood
Ressler and Hazelwood worked at the FBI at about the same time as Douglas, they all sort of mention each other in their books but you get slightly different versions of who did what in each. They all pretty much agree on the fundamentals though.
