Historical but not fantasy, *The Last Report on the Miracles at Little No Horse*, by Louise Erdrich deals with Catholicism meeting up with Ojibwe culture.
Sci-fi, *The Sparrow* , by Mary Doris Russell, is about a Catholic priest’s encounter with the culture of an alien planet. It’s my favorite first contact story.
