Based upon your list, you would not be disappointed by The Pillars of the Earth, for sure. The sequels are not as good, in my opinion, at least, but Pillars are well-worth the 900 or-so pages.

Discworld is the correct answer
I read many books in the Middle Earth and The Forgotten Realms settings and enjoyed both. I totally recommend it if you like all the classical tropes of fantasy: elves, orcs, dragons, wizards, magical swords, massive battles, evil gods, etc.
From Middle Earth start with the Hobbit, from the Forgotten Realms start with the Dark Elf trilogy.
