I recently finished the wheel of time, those were 15 books and when i read the last one i felt really good, being 15 books it felt like i just climbed the Everest, a very long but rewarding journey, it was an amazing story of fantasy and actually book 1 was my first book ever. So i am looking to start another "big" journey like this one, to climb another everest, fantasy is what i am looking for.
I also read the Kingkiller Chronicle, the stormlight books and the mistborn first trilogy.
I tried Game of Thrones but i just didnt like it enough, its not bad, just not my thing.
I dont specially like Sanderson, he is ok, but him being so fast when writting books makes me feel like the quality of his books is slowly dropping, imo Stormlight book 1 is the best and book 5 is the worst, so i dont feel like reading any Sanderson anytime soon, Kingkiller Chronicle was cool, the story was ok but the way its written, idk, Rothfuss words had "something" about it that made me read it and like it a lot, wheel of time is my favourite of all time, but i guess i can live withouth the RJ style of 3 whole pages about the details of a tree.
I´m looking for another mountain to climb, i like stories that hold by their own weight so stories that are basically "actually this is a methapor/allegory or IRL theme/politic/historical event so you cant understand it correctly if you dont know the IRL thing" are what i dislike the most, i am also not exactly a fan of "emotional support" stories or "healing and comfy books", i want a good or amazing story, not something that wants to heal me or change my life, if a story hits me, i want it to be because of what it is, not for what is intended, this is a little hard to explain but i hope you can understand my point. High or low fantasy is good, not a specific setting or anything, nothing is out of bounds, im not specifically searching for gore or sexual stuff, but it wont stop me from reading a good story, i also dont mind religion, fictional or real, as long as it just contributes to the story, i just feel the need to start another big big BIG journey (preferebly like WoT, where i follow just one set of characters from start to finish, it doesnt matter how long, but i dont exactly love stories that continue with "the next gen" or things like that), if you have suggestions on smaller stories but that are really good, i would also like to hear them, what are your best books?
TLDR; i want a suggestion on high or low fantasy that is long, no matter the setting, if its "short" is also okay, i just want a good story that holds its own weight.

The Gormenghast Trilogy by Mervyn Peake isn’t a million books but it is a helluva a dense door-stopper (a little over a thousand pages), following a character and his family from his birth through his life.
The Realm of the Elderlings by Robin Hobb. 16 highly acclaimed full-length novels plus some short stories and novellas.

Malazan Books of the Fallen by Steven Erickson; 10 long books. Imo, one of the best fantasy worlds created. Super high fantasy.
First Law series by Joe Abercrombie. 9 books. There is a trilogy, 3 “stand alone” books that follow characters from earlier books and another trilogy. These books are excellent. Low fantasy. If you like audiobooks I would really recommend listening to these ones. The narrator is amazing.
R.A Salvatore’s Drizzt series is very good. Classic sword and magic fantasy set in the D&D world of Faerun. There’s a ton of books. It technically starts with the Icewind Dale trilogy.
Malazan seems like the obvious choice. Isn’t that the quintessential Everest of fantasy?
The Dark Tower series by Stephen King
