I'm a terribly picky reader. I enjoy stories and writing but I struggle to really enjoy anything. Interesting concepts aren't difficult for me to find, it's primarily the writing/narration I have issues with.
I like writing that flows nicely and doesn't read like a checklist (like the Game of Throne books). I enjoyed the Witcher books writing style, if that's a good reference. Characters that aren't stereotypical would be nice too.
I like fantasy and historical fiction the most. However, I prefer simple fantasy with simple concepts.

The Discworld series by Terry Pratchett, a fun read.
Drizzt the drow and his friends by R A Salvatore and he has other series like sci fi.
Get a library card and use Libby to check out books and audiobooks online. You have the freedom of sampling tons of books and returning them if you don’t enjoy them for free. I find myself not finishing loads of books that I start, which I’m not sure is a great thing, but my reading list is too long to be stuck on something I’m not loving.
The edge chronicles by paul stewart and chris riddell (fantasy). Beyond the Deepwoods (first book) primarily. An easy read, doesnt hit checklists, a fantastic original world, juvenile mainly (so not long) but with rather adult themes (such as murder and in the second book a goblin that keeps toes as trophies), and has beautiful illustrations. I think just about anyone would like it.
As for historical fiction Sharpe’s Tiger by Bernard Cornwell or The Terror by Dan Simmons are both quite good.
