Epic Fantasy/Sci-Fi that reads easier than Malazan

Hi everyone, first time poster here. Im looking for a big ol' epic Fantasy or Sci Fi novel or series. I'm currently reading Malazan Book of the Fallen and I love it, but for neurological reasons I need to find something where the writing style is less complex.

Lord of the Rings and the Hobbit are some of my favorites as well as Dune and the Foundation series. As much as I enjoy Erikson's complex and often inverse sentence structures, they're not good for me while I'm recovering. No limits on vocabulary though! I love new words. Thanks in advance!
