Fantasy book with a traditional knight on a quest to save the princess plot

As listed in the title. I’d like a story with a traditional knight off to save the princess quest. Or they can be the fair maiden.

They either have been promised to marry the dame or not by the King. That doesn’t matter. Dragons, evil sorceries, magic can be a part of the story but doesn’t have to be.

It can even be a historical fiction if such a book exists too.
