I used to be a huge fantasy reader but I have been struggling with the genre recently. I really want to sink my teeth into some characters and storylines with real depth but feel like most recent publications won't go there. I am just about to DNF The Raven Scholar (highly anticipated!) because it feels too superficial for me. I felt similarly about The Green Bone Saga, all VE Schwab books, Circe, and anything romantasy I've tried.
Some books I LOVED are Jonathan Strange & Mr Norrell, Till We Have Faces & The Gracekeepers. Do you have any recommendations for books like this?

The depth of ASOIAF is pretty crazy. Maybe not what you want to hear or are looking for but they are very good books. That said, probably won’t ever be finished.
I have not read Jonathan Strange & Mr Norrell, or Till We Have Faces & The Gracekeepers, but from what you describe, you might like these. Both first in a series:
* The Mirror Empire by Kameron Hurley. Currently reading this now, I’m about 2/3 in. It’s the kind of monstrous tome with tons of characters with elaborate names and titles and vastly complex families, political structures, and types of magic.
* City of Last Chances by Adrian Tchaikovsky. I’d say this is more complex than the Green Bone Saga. I’m not sure if it’ll quite be up to your standards, though. It’s very recent.
Lord of The Rings, Chronicle of Narnia.
