Recently read a fiction/horror novel about a haunted arctic expedition called Dark Matter by Michelle Paver an I was fascinated by the environmental challenges and struggles. I’d love some recommendations whether it be fiction or any genre or nonfiction that focus on things like arctic exploration or any comparable stories.

The Terror, by Dan Simmons. Should be at the top of your list! (there is also a pretty decent TV series)
For horror-inflected polar expeditions, Dan Simmons’ THE TERROR is very bleak and atmospheric, and should tap into the “horror of exploration” vibe you’re describing; if you haven’t read them before, Lovecraft’s MOUNTAINS OF MADNESS and Poe’s ARTHUR GORDON PYM are also worth looking at (I think the former is probably the story by Lovecraft that best stands the test of time). I haven’t read it myself, but John W. Campbell’s WHO GOES THERE?, famously (loosely) adapted into John Carpenter’s THE THING, may also be worth a look as a pulp classic about Antarctic sci-fi.
