I almost exclusively read epic fantasy, horror, and historical fiction. My favorite author is Stephen King, my two favorite series of all time are Game of Thrones and The First Law by Joe Abercrombie. One of the greatest books ever written (in my opinion) is Pillars of the Earth by Ken Follett. My modern day horror musts are Ronald Malfi and Adam Nevill.
I’m slowly working my way through the Wheel of Time and the Stormlight Archive by Brandon Anderson is sitting on my shelf waiting to be read. I think Robert McCammon’s longest novels (think Swan Song, Boy’s Life, and Speaks the Nightbird) are incredible.
I love really long books (850+) mixed with sub 300/400 pagers I can knock out in a day or two.

Red Rising series
The Coldfire trilogy by C.S.Friedman. Each individual book is shorter than your preference, but it’s a completed trilogy with an optional scifi-ish preview book set hundreds of years in the past, so it should give you a good amount of enjoyment. It’s a dark fantasy that has some world-saving stakes so it might be a good blend of your epic fantasy and horror tastes.
The Deryni books by Katherine Kurtz. Excellent historical-inspired fantasy with detailed politics, there are over a dozen books in total (with each set of three container a roughly self-contained arc, which can be read in any order).
