A thriller with a subplot of grief would also be great, but my main requirement is that the grief part of the book is well written. I’m open to any genre, it can be realistic fiction or even fantasy or sci-fi.
I’m especially interested in books that involve grieving a parent (but please share recommendations even if they don’t!).

Let me introduce you to the realms of the elderlings (Robin Hobb), particularly the farseer books.
5 series of about 3 books each. 3/5 of the series focus on one man and his life (and various griefs)
It is fantasy. It is extremely well written and engrossing. You can read series 1 or 2 independent of any of the others.
You can read 1,3&5 without reading 2&4
