I find hospitals kind of fascinating from a sociological/logistical perspective. They seem to work like a giant single organism. People coming and going everywhere, specialist doctors on stand by, specialty wings, a team of 10 people assembled out of nowhere at 2 am for an emergency, a helicopter pilot always at the ready. I'd love a book that explores this topic in detail, hospitals and how all of its moving parts are divided and yet all work together. Preferably from a U.S. perspective and non fiction. Thank you.

Hospital Heal Thyself [Mark Taylor] deals with the logistics side of running a hospital. It’s a bit dated, but might lead you to some other good resources for this sort of thing.
I’d also look into books about emergency medicine and/or organ transplantation as these topics really show the coordination of people in a short time.
I read Five Days at Memorial by Sheri Fink, and found it fascinating. It’s about a hospital in New Orleans, and how it dealt with Hurricane Katrina.
I read this many, many years ago and I’m not sure that it completely fits this prompt, but I remember it being really interesting: Complications by Atul Gawande.
