The Poppy War trilogy hits different – starts fantasy but gets absolutely brutal, and you’re basically following someone’s descent into becoming a war criminal. Not exactly villain POV from the start but you watch it happen in real time
Also check out The Broken Empire trilogy, Jorg is straight up a psychopath narrator and it’s dark fantasy with some genuinely disturbing moments

The Children on the Hill by Jennifer McMahon has 2 POVs with one being the villain, but you don’t know which one. What Lies Between Us by John Marrs has the same premise. I loved both of them!
