One of my resolutions this year is to be more nutritionally literate (idk if that’s even if a phrase anybody uses). So are there any books that would help me get started with that. I am particularly interested in learning how to read labels on the back of food packaging. I’m also looking to just generally learn more about the food we eat and how our bodies process it.

In this day and age of health grifting, MAHA disinformation, and nutrition nonsense I’d recommend an academic text rather than anything written “for the masses.” Look for authors that are primarily registered dietitians (RD); RD is a licensed job title and means this is a person educated in nutrition, whereas “nutritionist” or “dietitian” is something anyone can just say. The most trustworthy science is not going to make a lot of extreme statements or make simplistic universal rules. If something sounds surprising look it up in multiple trustworthy sources.
The only free online information I think is trustworthy is Dr. Jessica Knurick. She’s on all the apps and is very evidence based and rational. She’ll tell you the facts and also explain when something is or isn’t worth worrying about.
