I haven’t read many books…..honestly, very few. These are the fantasy books I’ve read so far:
First 3 books of ASOIAF (read a long time ago)
Currently finishing the Mistborn trilogy
The Lies of Locke Lamora
The Blade Itself
Out of these, I enjoyed ASOIAF the most — especially the dialogue and the overall story.
Mistborn has been amazing too, but I found the dialogue a bit bland compared to ASOIAF.
I absolutely loved The Lies of Locke Lamora….the characters and banter were fantastic.
I also enjoyed reading The Blade Itself, but by the time I finished it, I felt like not much actually happened. It almost felt like too little story for a full book. Was it mainly setup for the next two books? I’m not sure.
Now I’m confused about what to read next. My options are:

Read Red Seas Under Red Skies
Start Jade City (I’ve heard it has great dialogue and an amazing story)
Red rising?
