I'd love to read more fantasy books, but a lot of recommendations are either classics or recently-published books.
Can you recommend Fantasy books published >25 years ago, omitting big names everyone knows like Lord of the Rings and ASOIAF?
Bonus points if it was never adapted into a movie.

The Dragonbone Chair, by Tad Williams
The Farseer Trilogy by Robin Hobb, although that does have more recent sequels
The Earthsea Cycle by Ursula K Le Guin (well, the last two books in the series were published in 2001).

The sword of shannara series – Terry Brooks
Myth Adventure series by Robert Aspirin. The first story “Another Fine Myth” was published in 1978 and he continued to write the series until he passed in 2002. His co author in later books continued the series and I think the latest was published around 2015 or 2016.
The series is very light hearted and pun heavy in a magic heavy fantasy setting. The writing style in the earlier books reminded me of some of Terry Pratchett’s Discworld books that were published around the same time. (Another excellent series)

The Fionavar Tapestry by Guy Gavriel Kay, Tigana, A Song for Arbonne, The Lions of Al-Rassan, and The Sarantine Mosiac by the same
Sarah Douglas, she had some really great grimdark trilogy called The Axis Trilogy. I read that much younger than I should have.
