A big series would be weis and Hickmans dragonlance. There are multiple stand alone books for each character on top of the big story.
I read *Memory, Sorrow and Thorn* shortly after finishing *RotE* myself.
It has a similarly slow pace, but the characters are nowhere near as deep and well built. *MST* is an interesting bridge series between the Tolkien inspired fantasy and sword and sorcery of the 70s and 80s with the more modern, morally ambiguous and political fantasy that started to appear in the late 90s.
The Bear and The Nightingale trilogy by Katherine Arden. It’s historical fantasy and it’s very beautifully written ,probably the most beautifully written books I’ve ever read.
The First Law trilogy, by Joe Abercrombie. The character perspectives are incredible.
