R Scott Bakker’s the Second Apocalypse. Blood Meridian meets Dune meets Lord of the Rings, with all the trigger warnings.
Between Two Fires by Christopher Buehlman is both excellent and extremely dark.

Gotta check out the First Law trilogy by Joe Abercrombie
Oh also if you’re willing to read a manga Kentaro Miura’s Berserk is fantastic and a seminal piece of dark fantasy. Once you’ve read it you’ll start noticing its influence EVERYWHERE
If you’re okay with horror elements, Black Leopard, Black Wolf by Marlon James is the darkest dark fantasy I’ve read.

Start with the first law trilogy by joe abercrombie see how you like dark stuff.
If you do dive right into Scott bakker the prince of nothing trilogy then read malazon the book of the fallen.
Maybe Empire of the Vampire
Altered Carbon is sci-fi, but super dark and truly amazing.
