The Wheel of Time by Robert Jordan is high fantasy with a similar feel. The Eye of the World is the first book and its excellent. Maybe a bit slow to start (first 70 pages or so), but it definitely becomes an engrossing read.

Theft of Swords by Michael J. Sullivan has great world building and a fellowship-type group of people working together. The author is quite prolific and has a lot of spin off series set in the same world at different time periods.
The Jasmine Throne by Tasha Suri has some of the best world building and characters I’ve read. Very cool mix of magic and politics.
