I'm not sure if anything like this exists, but I'm looking for sort of historical fantasy based around exploring and discovering Latin/South America around the time of the conquistadors. Another idea I like is pirates in and around the Caribbean, and possibly moving in to exploring Latin and South America. No clue if either of these topics exist in fantasy, but thanks for any and all suggestions

Been looking for similar stuff myself actually. There’s definitely some fantasy out there that plays with the conquistador era, though most of it tends to focus more in the European side of things. For Caribbean pirates with fantasy elements, you might want to look into some of the nautical fantasy subgenre – there’s quite a bit that deals with magical seas and mysterious islands in that area.
The tricky part is finding books that actually explore from the Latin American perspective rather than just using it as exotic backdrop. Most what I’ve found has been more traditional “Europeans discover magic new world” type stories, which might still scratch that itch depending what you’re looking for.
“La ruta de Orellana”
“El entenado”
