Specifically from the old days. I’d like not so much history (like this happened on this date type stuff) but accounts from actual people (like he/she lived in a one room cabin on a mountain and here is how they got food to eat, etc). It could be anywhere in Appalachia but I’d prefer somewhere around The Smokies or Shenandoah or Kentucky or West Virginia.

The Foxfire books are an excellent resource for that.
The Foxfire Book – This is exactly what you are looking for. In the 1960s, high school students in Georgia interviewed their elders to preserve dying traditions. It’s filled with first-hand accounts of hog dressing, log cabin building, mountain ghost stories, and soap making. It is the ultimate “how they survived” manual.
bell hooks might be a good author to look into! I’ve specifically read *Bone Black: Memories of Girlhood*, which talked about her experience growing up in rural Appalachia Kentucky.
