I’ve been looking around for books that encapsulate the idea of needing something that is unattainable and the struggle of dealing with it. Think of I Have No Mouth And I Must Scream (not from a plot perspective, just that the title fits what I’m looking for almost perfectly).

Different genre completely but Perfume by Suskind, it’s the only book I’ve read in one sitting and I can’t recommend it enough.
