Idk if this counts but The Poppy War. It’s fantasy but Rin’s growth emotionally and skill-wise is amazing to witness. I still haven’t finished this one myself though but I’ve read enough of it to guarantee that it’s got what youre looking for lmao

Probably not quite what you were expecting, but *Flowers for Algernon* by Daniel Keyes would actually fit the bill. Incredible book. Highyl recommended.

Have you read the Paksennarrion trilogy by Elizabeth Moon? Paks starts out an unskilled recruit in a mercenary army and ends up a paladin.
