Most books that I’ve read cover the spiritual or experience part of it, but I’m mainly looking for informative work on what the exact science is behind different psychedelics, what studies have been done with them, what types of therapy/treatments have been explored, how psychedelics are currently researched,…
If there are some good books on psychedelic rituals, shamanic experiences, etc., I’d be more than interested in that as well, but my main interest goes towards understanding the science around these mind-altering molecules.

How to Change Your Mind by Michael Pollan: gets into the social history, natural history, experience of using, scientific explanation of, and medical applications of psychedelics. It’s also brilliantly written
Entangled Life. More broadly about mushrooms in general but pretty much any detailed science book on the subject is going to have a good chapter or two about psychedelics, and this is no exception
