Plot to the trash. Okay! I’m exaggerating as it may be really difficult for any writer to make characters who could be analyzed like in getting into the layers of an onion. Just characters that are confusing, complicated, that may be moved by love or hate. Maybe an arc or development. Maybe relationship going from one feeling to another with each other. Character that can be described by one trait and can feel realistic as deep in the way we can see an introspection.

That’s the definition of one-dimensional, though?
Of course there’s books with complex/three dimensional characters. The vast majority of the classics canon is that. From Lolita to Pride and Prejudice to Moby-Dick to Count of Monte Cristo to Sherlock Holmes to Dostoievsky’s works, they all have fascinating characters.
Do you have any more criteria?
You need some Fyodor Dostoevsky in your life. The Brothers Karamazov fits your description to a tee. Check him out, he’s one of the greatest of all time, truly. Especially when it comes to complex characters
