I'm feeling like a fantasy book with a relatable character, such as Rincewind, whilst being more serious but having typical hero personality traits under pressure. I'm also a sucker for head-over-heels romance and moral dilemmas, alongside stronger emotions both positive and negative

Try T. Kingfisher. Her fantasy MCs are usually very relatable, although none are Rincewind surrogates. I would especially start with A Wizard’s Guide to Defensive Baking, Minor Mage, and Bryony and Roses. Her novella Nine Goblins is very good as well if you’re looking for that “ordinary people in extraordinary situations” vibe.
