I am an experienced reader who mainly reads classical novels, detective fiction, stuff that gets literary prizes and a lot of foreign literature. I have seen game of thrones though and I liked it as a show. what would be the best book to start my fantasy journey?

The Hobbit and then The Lord of the Rings trilogy. Tolkien was the OG for a reason and since you also enjoy literary classics, this is a great start for you.
I’ll suggest something not usually suggested to people because it’s older and was never as “famous” as many others – the Lyonesse trilogy by Jack Vance, starting with Suldrun’s Garden.
Wheel of Time or Stormlight Archive are epic. If you want a challenge, then Malazan is a great choice as well but I would personally suggest that you save Malazan for last.
