This sounds very D&D. Dungeon crawling. I wouldn't mind that either. I'm looking for the great books of this genre. Monster of the Month, hopefully with a deeper psychological aspect. Trolls, Dragons, Goblins, Vampires and Ghouls. Orcs, Barbarians, Mercenaries and Knights. Demons of the ancient world. High/Low Fantasy, as long as its traditional and rooted in real folklore and legends. Magic and Dark Wizards and mysterious Sorceresses. Quests, drama and mystery.
Hopefully good writing and exciting creative ideas with decent characters. I don't mind if the main character is somewhat of an anti-hero, a student of necromancy and the dark arts, if such books exist.
Let the festival begin!

Not quite but try the Thief by Megan Whelan Turner, the dragon and the George and sequels by Gordon Dickson
THE EYES OF THE DRAGON by Stephen King is a very old school swords-and-sorcery fantasy novel.
What about The Witcher books?
