It’s a hefty one but Demon Copperhead is an incredible retelling of David Copperfield. On a totally different note (horror) What Moves the Dead is heavily based on The Fall of the House of Usher

I really like the Remixed Classics series. Plenty of good books there, including a Pride and Prejudice one.
