I really would like to read a book about woodland animals set in a forest like environment, with kinda like cozy cottage-core vibes. I’m really into foxes specifically, deer, owls, etc. Can you guys suggest anything along the lines of that?

Depending on the vibe you’re after, the animals of farthing Wood is pretty good- a kids book though.
It’s non-fiction, but Of Wolves and Men by Barry Lopez is really good.
