I've read the witcher book series and I've watched GoT and its prequels, I'm looking for something that has a feel close to them a medieval or fantasy/medieval vibe
Curse of Chalion by Lois McMaster Bujold. One and done, not an epic series, but there are more books set in that world

If you want that grim dark feel of Game of Thrones, you should probably check out Joe Abercrombie. I would start with the First Law series.

The wandering inn by pirateaba(this is a litrpg that actually blew my mind. It’s crazy long, and gets way more involved than I would have ever imagined)
The spellmonger series by terry Mancour – i was hooked for the first few books, but i kind of lost interest after about the first 8 books. Still worth a look in my opinion.
The wheel of time by Robert Jordan. Overall a really good fantasy series, and one of the first ones i picked up. but there are some parts that just annoy me.
