Very young I've started reading journey with Harry Potter and Narnia. Later on I've done my fair share of Warcraft and Warhammer malus as well as slayer saga books, they are a mess now and I don't know where I've stopped and what has been written since then.
Witcher, Eragon, Hobbit and now I've gotten to Farseer Trilogy.
I'll include spoiler with tag which annoyed me, so don't read if you plan to read this series.
The main villain of the series has been pain in the arse for entirety of the trilogy and the revenge had no taste at all. There was one sentence and that was it.
Other books I've read had much more satisfying endings from what I remember.
Outliers to fantasy that I read are Hunger Games and entire Sherlock Holmes collection.
I'm considering Discworld but I'd like more options.

your taste is pretty solid – you’ve hit a lot of the fantasy staples that most people love. farseer trilogy is great but yeah, that ending left me wanting more too after all that buildup.
if you liked the witcher series and eragon, you might really dig the first law trilogy. it’s got that darker edge but still readable, and the character development is incredible. also the kingkiller chronicle series has some beautiful writing, though fair warning the third book is still MIA.
since you enjoyed sherlock holmes, maybe try the rivers of london series? it’s like urban fantasy meets detective work in modern london. and if you do decide to jump into discworld, start with guards! guards! – it’s a good entry point and has that mystery element you seem to like.
