Piranesi by Susanna Clarke.
All the Murderbot Diary books by Martha Wells. The first one is All Systems Red.
Ditto for the Penric and Desdemona books by Lois McMaster Bujold. The first one is Penric’s Demon.

I mean…I can’t help but think that this depends on what type of reader you are.

I’d recommend Redwall by Brian Jacques. It’s a relatively short story but lots of interesting characters and plot points.
