A song of ice in fire made me care so much about what would happen and way Martin set up the plot and the characters and overall world was amazing. I’ve tried to read other books, but they just don’t feel the same. I’m about to start red rising, but I’m not sure if it will give me that same excitement do any of you know any other series that gave that same feeling and captivation?

red rising is actually really solid choice for that kind of investment in characters. the first book starts a bit slow but once you get past that initial setup, the political maneuvering and betrayals definitely scratch similar itch.
you might also want to check out first law trilogy – it has that same morally gray characters and brutal political scheming that makes asoiaf so addictive. the writing style is different but abercrombie really knows how to make you care about bastards you probably shouldn’t root for.
