A Story that is a giant metaphor for a deeper narrative

I remember reading a novel about a man who would go to a fruit store and write everything in details (the shop, the fruits themselves, the streets) but as we went further, the writing would crumble due to the author mental state and reveal that the story was actually about a cannibal and the fruits were the body parts of his victims.

I’m not looking for something that gruesome necessarly but a novel that has hidden layers.

Life of Pi \*SPOILERS\* also has a big part where the animals were actually humans from the ship.
